When was the last time you yearned for something hearty and sweet? Maybe something like a warm apple pie or lava chocolate cake straight out of the oven? During these wintery nights here in Northern California, it is natural for our bodies to crave warm and hearty foods.
Normally, I would turn to a warm chocolate cookie with chocolate oozing out of the cookie as it melts in my mouth. However, I am still on my no grain, no wheat and no processed sugar food elimination experiment so I can’t just eat any dessert that is available in the market. What am I to do?
As my cravings intensified, I knew my body was calling out for what it needed to stay balanced. So I listened to my body closely and set out to experiment with making my own healthy and hearty desserts to satisfy my cravings.
My curiosity and need to fulfill exactly what my body needed led me to several super delicious and energy-packed desserts, one of which is the blueberry muffin. Due to the jam-packed fiber, minerals, vitamins and healthy fats in the muffin, it is satisfying to the belly and is an effective cure for constipation. It is perfect for my grandmother who is ninety-two years young, has no teeth and struggles with constipation daily. The muffin is soft and easy for her to digest. It has become my grandmother’s favorite food and her superhero. It has become the magic drug for my hearty food cravings.
Are you ready to make this magical and superheroic muffin? All it takes is 10 minutes of your time. Follow the simple and easy instructions below. Here is to feeling good and living life with energy and ease.
Ingredients (organic whenever possible):
2 cups ground almond meal
¼ cup ground flax seed
1 handful of coconut flour
1 tsp baking powder
Dash of sea salt or Himalayan salt
2 ripe bananas
3 large eggs
½ cup coconut milk
¼ cup coconut oil
1 bag (10 oz) frozen wild blueberries
½ to 1 cup of shredded coconut
Set oven to 325 degrees
Combine all dry ingredients into one bowl
Mash bananas and combine with other wet ingredients in another bowl
Add wet to dry and then fold in blueberries and shredded coconut
Spoon into muffin tin and bake for 10-15 minutes or when toothpick comes out smooth
Cool on rack and enjoy this super yummy and nutrient-rich treat!
